fall activities

It was a beautiful fall weekend here in The Bluegrass. The sun was shining but the air was crisp. So, we did some fun fall activities together. Scarlett has become quite a pumpkin fanatic so I was a little concerned with how she would react to us making them into jack-o-lanterns, but she loved it!

First we gathered our pumpkins...
We put some paper on the floor in the kitchen since it was too cold to be outside.
We drew out our designs and then started cutting. Scarlett did her cutting with a decorative butter knife because it was cute and most importantly dull.


She wasn't scared to scoop out the pulp...
And put it right into the trash bag.
Here is one of our finished jack-o-lanterns.
And here they are glowing away with Raggedy Ann and Andy!
Raggedy was getting out her pre-bedtime wiggles :)

Cowboy Caviar

I love finding and trying out new recipes. The 'trying out' part is where I sometimes lack followthrough and it is of course the most important. Well, I wanted to share this healthy, easy and most importantly delicious dish with you, my dear readers. My sister Ryan and I were first introduced to it this summer while we were vacationing in our favorite spot, Perdido Key, Florida. To make a long story short, on a whim one evening we went to an art class where we met a bunch of darling, old southern women who sipped wine and ate hors d'oeurves while expressing themselves with watercolor paints. It is SO enjoyable! Needless to say we secretly finished off the cowboy caviar in the back corner while we listened to our new friends talk about their 'motha' (that is mother for any of you who are not familiar with the words of the south) and say 'I declare!' (the perfect "declaration") to any and every topic that came up. ha! I have searched and searched and thus modified this recipe... so straight from the Owen Range to your kitchen:


~~~~ COWBOY CAVIAR ~~~~
1 can black beans, drained
1 can black eyed peas, drained (withOUT pork)
1 can pinto beans, drained
1 can sweet kernel corn, drained
1 red onion, chopped fine
1 green bell pepper, chopped fine
1/2 cup chopped pickled jalapeno peppers
-- Combine all the ingredients above into medium sized mixing bowl (preferably one with a lid). Mix and set aside. --

3/4 cup fresh cilantro, chopped fine
1/2 tsp. garlic salt
-- set aside to add later --

In a small sauce pan, bring to boil:
1/2 cup rice wine vinegar
1/2 cup extra virgin oliva oil
1/3 cup white sugar
1 tsp. salt
1/2 tsp. black pepper
-- Very important... let this cool to room temperature before adding to your bean/corn mixture --

After cooled, pour rice vinegar mixture into your mixing bowl with beans/corn and mix. Then add cilantro and garlic salt. Let "marinate" for a few hours in the fridge or over night. Serve with Tostitos SCOOPS or your favorite tortilla chips and enjoy!!!

We had this for dinner the other night over oven baked quesadillas (one of our favorites) and it was the perfect touch. I am telling y'all, this stuff is yummo whether you are a city slicker or a true cowpoke! And, I am not into all the blood and guts stuff, but this "caviar" it is perfect for a Halloween get together because you could say it is eyeballs and mashed up brain and goo or whatever.... ha! our harvest-time friend

Scarlett wanted to reveal who her "date" will be as we celebrate "Harvest" next Monday here on the Owen range. Drum roll please....

Raggedy Andy will be accompanying her for the evening as she will be dressed as Raggedy Ann! Thank you Nonni for lending Raggedy Andy to us. It is really special because she will be wearing the exact costume I wore when I was about her size (but a little older, she is big for her age as we know!). It is also sweet because Mitch dressed up as Raggedy Andy one year when he was a small boy too. I need to find pictures of he and I so we can have a little "Raggedy moment" ha! As you can see in the picture above, she really believes Andy is real. She reads to him. It is so sweet.

The only problem is, when she hops down to be her busy self he doesn't do the same...
She just hoists her little hiney back up into the chair so she can be right next to him...
Because he is still that much fun!

in the way...

I confess I have been letting everyday tasks get in the way of blogging. That might sound silly but sitting down to write a post really lets me reflect on what has been going on... the important things like Scarlett's sweet smile and the funny things she does all the time.
One funny thing she did today that made me laugh so hard... right after bath-time when her hair was everywhere and she was just sitting on our bed in her little onesie, she put the hairbrush up to her mouth like a microphone and was "singing" away and pumping her arms. The girl can put on quite a show! Don't you hate it when the menial tasks get in the way of focusing on the truly important moments? I do.

this week...

I have been a little behind on my blogging this week, so here is some of our week in pictures...

Scarlett and I have been working on colors and shapes. I forgot how soothing coloring can be! We still have quite a bit to learn, but we are having fun.
We got a special delivery from Target...
(I will try to refrain from Christmas posts at least until after Halloween!)
Need a dinner idea? Try gourds right on the stove top.... these were hand placed by my sweet, busy toddler.

On Wednesday, Scarlett and I had a pajama day. It was cold and rainy and these prove to be some of our most productive days. Scarlett taught her little baby doll a lot while we were at home...
How to sit up straight....

How to hold hands (her personal fav!)...
How to sit right beside "mama"....
Oh, the floor seemed so cold for little baby, so she snatched her right up...
And then there is the classic Scarlett face... I don't think we will see baby doll doing this one anytime soon :)

Last night Mitch & I got to go out on a little date which I am embarrassed to say is rare. Between his schedule with school and Scarlett's bedtime it is just hard to swing on a regular basis. My hats off to those who keep a regular date night on the calendar! Anyhow, my mom had given us a Groupon she purchased for a new Italian Restaurant. So, she watched Scarlett while we had a nice, quiet dinner just the two of us. Here we are before we headed out...
And the nicest part is we never even had to worry about Scarlett. She and Nonni colored and had fun until we got home. By the way, my mom found one of the greatest things for coloring with toddlers: crayola twistable crayons I highly recommend them! Especially for the little crayon eaters in your life :)

on the farm...

On Sunday afternoon we packed up and headed to Huber's with my family (minus Chaz...we missed you!). We had a ball. For those who may wonder, this is what happens on the farm...
